Afternoon tea has been a tradition in our family for as long as I can remember. Whether it was a simple English Breakfast tea with Nilla Wafers and peanut butter or a full spread with finger sandwiches, scones and petit fours, we have always loved sitting down to afternoon tea in our house.
Our family’s personal favorites are the cucumber sandwiches and the shortbread biscuits.
Recently, we had a high tea at our house and we upgraded our finger sandwiches by using Nagel’s Bagels! These are quick and easy and they are perfect for afternoon tea, a simple snack, an open house or your next get together.
Here is how I make them:
Cucumber Sandwiches – Slice a seedless English cucumber into 1/8″ slices. Cut open your favorite bagel (We used Sesame Seed). spread plain cream cheese on the top and bottom half of the bagel. Add the cucumber slices. Try not to overlap or they will slide out. Put the top on the bagel. Put 4 long toothpicks into the bagel to hold the sandwich together. Cut the bagel into fourths. That’s it!
Pimento Cheese Sandwiches – the key here is to use a very thick pimento cheese, not runny. We love Suga’s Pimento Cheese best. You simply spread your desired amount of cheese, put in the long toothpicks and cut apart into fourths. Done!
Chicken Salad – You can make your own or drive through Chicken Salad Chick. Either way, they will turn out great.
